Parrando’s Combinations

We're excited to share some of our new specials as we welcome diners back from the Covid hibernation 2020-2021. If you're anything like me, you see the enchiladas and tacos and still can't decide if you really want a carne asada burrito. 

 There are so many great items to choose between, from the steamy and fiery chicken Fajitas to the ever-famous Camarones Brochette (think jalapeno poppers inside jumbo shrimp). I usually like to eat a little lighter so I can enjoy a pineapple margarita without feeling too stuffed. However, if I'm hungry and want to try as many things as possible and leave full, I try the Parrando's combination.

What is the Parrando’s Combination?

Instead of looking over the menu and debating whether you should try the beef enchiladas or the chicken taco, choose both. The Parrando’s special allows you to pick 2 or 3 menu items listed below. The best part is that no matter what you get, you still get the traditional Tex-Mex sides like Mexican rice served over refried beans, guacamole, and pico de gallo. The combination gives you the most bang for your buck and has the best chance to quench your thirst for exploration better than any other dish on the menu.

Parrando’s Enchiladas

All of our enchiladas are made from two made-fresh corn tortillas. They are wrapped around a meat of your choosing and smothered in melted Monterey Jack and Cheddar cheese. Next, the tortillas are lathered with tomato or tomatillo sauce, butter, and spices. At the same time, the meat slowly cooks. Then, the cheese slowly melts and forms a crust of burnt cheese that encases super tender bites of meat, cheese, and spices like garlic, pepper, cayenne, and paprika. 

My favorites are the beef and spinach enchiladas. As a pro tip, ask for your enchiladas to be smothered in green chili sauce instead of red. 

The best thing to do is cut into your enchilada and mix it with a bite of refried beans, guacamole, and Mexican rice. There are so many flavors in a single mouthful that you'll beg for more as the spices hit your mouth and lips at different times, creating various flavor profiles.

Are You a Vegetarian?

The spinach enchilada is decadent like any other enchilada and can be made as a vegetarian meal upon request. I can't understate how incredibly fragrant and delicious the tomatillo sauce poured over the enchilada is. The tender spinach and melted cheese will make you forget that you don't have meat in your enchilada. So come and try it out, you won't regret your choice!

Parrando’s Tacos

For the Parrando’s Combination, you choose either beef or chicken tacos with 1 or 2 of your enchiladas. Our chicken is marinated overnight to ensure all the flavors and spices seep into the meat. The chicken is tender, juicy, and packed full of Mexican spices to enhance the taste of the chicken. The chicken taco is worth a try, especially if you ask for pico de gallo on top with queso fresco; the taco is unmatched!
